Cajun Jambalaya recipe...............................

First off,DO NOT TRY MAKING A JAMBALAYA IN JUST ANY POT.The pot has to be a BLACK IRON POT.
This is for a 8 quart black iron pot with a iron cover.

Ingredients

1LB. pork meat (can be smoked)
1LB. smoked pork sausage
2 big onions
2 cup of long grain rice
4 cup of water(make sure it's full cups,water and rice)

OK here we go

ONIONS
Cut onions in small piece's (no blender's)

PORK MEAT
Cut meat in about 1" square's

PORK SAUSAGE
Cut sausage about 1/2" piece's

Put a little cooking oil ( about 2 table spoons).Put in the sausage and fry it till brown & cooked,Then take out the sausage from the pot.

NEXT

Put in the pork meat with about 11/2 cup of water and add a 1/2 tea spoon of salt and 1/2 tea spoon black paper.Boil meat till all the water is gone and let the meat fry on and cook. Take meat out the pot.

NOW PAY ATTENTION HERE

Put onions in pot and cook onions till dark brown,This will give the JAM.it's color.Now you will have to stay with these onions and stir them to keep them from sticking and burning.If it looks like they want to stick add a small amount of water and boil it out.

NEXT

Put all meat in with the onions and stir it all together

NEXT

Put 2 full cups of rice and ad 4 full cups of water

This is where you put in about 11/2 tea spoons of salt and about 1/2 tea spoon of black paper and a little La.red hot sauce(or what every you guys use where you live)

Now bring water to a boil,When it come to a boil start timing it,Let it boil 5min.( you can stir a few time here) After 5min put the stove down (I use an Ele. stove) to 2,If you are using gas put the flame down real low.Put cover on pot( NEVER TAKE COVER OFF POT ) for 20min.

After 20min take off cover from pot and take a big spoon bring the rice from the bottom to top and top to bottom.Cover pot back for 20min. more(Do not take cover off)After 20min. You have a real Cajun Jambalaya or a trip to McDonald's

Mag you really don't need to put the sausage in the Jam.Sausage just give it a better taste.You can make it just with the pork meat.My favorite jambalaya is chicken(I still use smoke sausage here too).Cook the chicken just a little(do not boil it).Chicken will take the place of the pork meat.When you get good at it you can make all kind of jambalaya's.

I tried looking it up on Google---I bet there is enough that I could Never make them all In A Lifetime ? I think I have the Correct Pot (Black cast iron with No Legs)---It is one from my Great Uncle who was a Cowboy and Trapped in the Rockies during the winter and homesteaded in Seeley Lake Montana---One of the things he did was work for a Dude Ranch close to his Homestead and used it to cook for the dudes that he took out--- When I was very young he gave it to me and I also own the Pistol he carried on his trap line---He was old by then and he said when he gave it to me that now I would be able cook some good food---It works very well but I don't use it often---I am going to give yours a try by the end of next month and I expect it to taste very good !
