Max, yep...I thought the loaner I had was an excellent coil when away from strong EMI sources, but one thing I found is that when I marked some targets with the Ultimate via poker chips, and then swapped to the 12x10 later to compare those deepish signals, the 12x10 would tell me some of them were obvious coin falses from iron. I would dig them just to be sure though and always the 12x10 knew what was up.
Maybe for me it was just not being as used to the Ultimate's language and traits as the 12x10, but even if the Ultimate was more prone to being easier to "get fooled" on coin hits from iron, in a way that might be a good thing when after fringe depth stuff. Might be easier to convince the machine and say "coin" for some stuff at the outer fringes, maybe...
But like you said probably iron. What I suspect is he might be hitting some small iron that once disturbed fluffs into nothingness and then not even a null is heard in the disturbed sand. Could be though a deep coin like George said. These Minelabs sometimes get confused on sweeping over a hole and end up ignoring a deep target with the disturbance of the ground signal, or like Neil said a coin flipped on edge. Seen that happen too, and not just with the Ultimate.
OBX, you are not imagining the lighter weight than the 10" Tornado. Both the Ultimate, S-12, and 12x10 (without a coil cover) are all right around the same weight and a good bit lighter than the 10" Tornado. One the first page of the coil sticky near the bottom is a thread link to a coil weight chart where these numbers can be seen in various with and without a coil cover configurations.
The S-12 felt heavier to me than the weight indicated, and I would guess due to it's more towards the back mounting point. Even though the 12x10 and Ultimate are very near each other in weight (without using a coil cover on the 12x10), and even though the 12x10 is a pretty light coil, the Ultimate feels even more light on the shaft. Only thing I can figure is the Ultimate's round shape more evenly distributing it's weight around the shaft, or perhaps just the sight of seeing such a huge coil on the end of the shaft and yet not feeling what you suspect. Great feeling coil for covering large vast areas faster. That's why I want one to use on certain days. Much more "right" feeling for areas like that to me than the 15x12.
I found the Ultimate pretty well behaved at one very mineralized beach I hunt and at my mineralized land sites, but required somewhat lower sensitivity settings than the 12x10 the same day/same site, and still wasn't quite as stable as the 12x10 with less nulling and such. Still, for it's size, I was very happy with the Ultimate's behavior in a round DD coil of that size.

PS- That Ultimate has one garbage coil cover on it. Never saw something so flimsy, and with huge gaps at the edges that suck sand or dirt right into them. Might be you were getting sand sucked in and out of the coil cover as you swept in the water, or if on the beach water/sand sloshing around in there too. No big deal to me, as I hate coil covers and plan to use 4 or 5 coats of spray on bed liner on the bottom/sides like I do all my coils to avoid that and also to drop a bit more weight. With the Ultimate I'm going to paint the top too with the stuff, because I hate that white color. I hear the also come in black now too though.
