Three Possum Recipes
Possum and Taters

Ingredients:
1 young, fat possum
8 sweet potatoes
2 tablespoons butter
1 tablespoon sugar
salt

Directions: First, catch a possum. This in itself is excellent entertainment on a moonlight night. Skin the possum and remove the head and feet. Be sure to wash it thoroughly. Freeze overnight either outside or in a refrigerator. When ready to cook, peel the potatoes and boil them tender in lightly salted water along with the butter and sugar. At the same time, stew the possum tender in a tightly covered pan with a little water. Arrange the taters around the possum, strip with bacon, sprinkle with thyme or marjoram, or pepper, and brown in the oven. Baste often with the drippings.

Stuffed Possum

1 possum (whole)
1 qt. cold water
1/8 cup salt
5 beef bouillon cubes
2 bay leaves
3 celery stalks (chopped)
2 onions (sliced)
1 bag packaged stuffing

Preheat oven to 350 degrees. Soak possum in cold salt water for 10 hours. Rinse meat in cold water and refrigerate 2-4 hours. Prepare stuffing according to package directions. Stuff possum cavity with prepared packaged stuffing. Close cavity tightly. Place stuffed possum in roasting pan, add water, bouillon cubes, bay leaves, celery and onion. After 2 hours turn meat. Reduce heat to 300 degrees. Cook for 1 more hour. Test roast, if not done reduce heat and cook until done.

Cajun Possum Chili - NUCLEAR HOT !!!

Ingredients:
Tomatoe Sauce (depends on possum)
1 tsp.-1 cup Chili Powder (Depends on Taste and possum)
1 Large possum or 3 small (If you ran over the possum better make it 4)
1 large pot or two large ones if the first isn't enough.
5-10 chili peppers (depends on taste and possum)
5-10 red peppers (depends on taste and possum)
5-10 jalapenio peppers (depends on taste and possum)
How ever much Cayenne Pepper you like, it depends on your taste and possum.
1 tsp. Black Pepper
a pinch of salt
Chili Beans for extra flavor
And whatever other ingredients that are hot and spicy you would like to add.

Directions:
1. Skin possum(s)
2. Remove internal organs, head, claws, and bones. There is no flavor or use for these. But if you want to add them, Go ahead.
3. Put some tomatoe sauce in the pot(s). Then add the possum.
4. Chop peppers
5. Skip step four if you don't want chopped peppers; it doesn't matter.
6. Put the rest in and let set for a long dang while.
7. Serve. Enjoy.
Serving size of Meal-depends on how much you put in and on the possum.

Preperation:
1. skin the possum
2. remove possum's tail, internal organs, head, and feet
3. Cut the possum exactly in half from where the head was to where the tail used to be.
4. wash possum real good in warm beer (get the beer from draining the empty's you accumulated doing steps #1 and #2)
5. Rub both halves down with olive oil, seasoning salt, regular salt, and lots of pepper.

Directions:
1. Build a nice size campfire
2. Split a 24" hunk of firewood into two planks
3. Use splinters from the edge of the planks to attach the 1/2 possum pieces to the planks, meaty side out.
4. Place the planks just near enough to the campfire where the planks won't catch fire, possum side toward the fire
5. Start drinking more beer and let the possum cook for about an hour to an hour and a half.

Serving:
1. When the possum has a nice crispy look to it and most all of the possum greese has dripped out, usually after about an hour to an hour and a half (with a properly made fire) remove the possum planks from the edge of the fire.
2. Remove the possum pieces from the planks by pulling out the "hold down" splinters (or just pull the possum pieces from the planks since the splinters will be pretty much burned down)
3. Throw away the possum pieces sides and eat the planks.

people down South ever ate a Greesy Possom---We Never ever had any her till around 20=25 years ago for around 5 years they were every where---I never knew any person to ever eat one of those Greesy Animals---We did find a use for then after a few years and they saved me a lot of money as I would find a road killed possem and drive over it 2 times after I did that I was good for around 2 months of greese jobs---If I made the mistake and drove over it 3 times you were sure to get a ticket for making the road to slipery to drive on---Now We have to get greese jobs at the service station because we killed them all off using them to greese our cars !
 
I my self like road kill skunk La Mode no seasoning or flavoring needed!:biggrin::rofl::yikes:
