The mono coil has a more cone shaped detection pattern than the DD coil. The DD has a more elongated and flatter pattern, which from my observations still gets best depth in the center. But the depth increase in the center of a DD coil is much less pronounced than that of a mono coil.
So if you want best overal coverage a DD coil is a good way to go. If there is a mile of beach ahead I'd probably use the DD coil. But the mono coil does have a depth advantage, although your must overlap sweeps more. If the area is "worked out" than the mono coil may pull up some deeper missed targets.
A nice side effect of this for me is that I find it MUCH easier to pinpoint targets with the mono coil. Best signal is dead center.
I use my Infinium on dry land a lot for nugget detecting. The weight difference alone makes the mono coil the choice for me as I hipmount the box, and the mono coil puts much less forward leverage on my arm than the DD. On a beach I would just let the coil ride the surface, but in rock piles I have to keep the coil just off the surface.
Best thing for me is to have both. In fact I have all the Infinium coils. It is not an either/or thing, I just use what I think works best for what I am doing.
The little 7"x3" DD is a great wader coil for trashy freshwater sites. Great separation and pinpointing.
