I don't hunt beaches, but much of the settings would be the same.

If your looking for the jewelry especially the gold then your going to have to hunt pretty low discrimination, so you could do some test (air test) with the smallest gold ring you can find on your wife's hand or jewelry box and see where it drops out at and then set your disc just a tad below that. I'm not sure about the sensitivity setting for sand, again, I would do some air testing to see how much distance is lost between the target and the coil as you change from low to high on the sensitivity then at the beach that will give you some idea of the depth difference but! even at that you will most likely be restricted on the amount of upper sensitivity you can run by the stability of the detector, that is to say, run the sensitivity as high as you can and the detector still be stable and not give false signals.
