<b>"I ran in prospecting at about max on gain and SAT."</b>
You may be better served starting with the default settings and testing on a sample target in the local ground conditions. Higher SAT settings can increase the audio contrast between targets and ground, but they also eat into the target responses. A local test can confirm a happy medium on the SAT and verify appropriate stability from the gain.

The accuracy of the Iron % indication will vary based on site conditions, the coil that is used, the size of the target, sweep rate, etc. In strong ground, small targets can read as high as 80% iron. As you were doing, you have to see how the % Iron indication relates to your situation.

Enjoy.
