My turkey recipe that I heard from Nathale Dupree years ago (she said she has tweaked it a bit but it has always worked great for me). The veggies are my idea. I put a whole peeled onion in the neck cavity, I fill the body cavity with a mix of cut up celery, onions, and carrots (cut in big pieces).
This is Nathalie's idea that shortens cook time and works great...
Put the prepared turkey in a roasting pan and add about 2" of chicken broth to the pan (with the turkey already in it). Preheat the oven to 500 degrees, cook for 30 minutes @ 500 (you will probably have to tent it with a little aluminum foil during this first 30 minutes because it will brown quickly, tent it after it browns and that will stop it from burning on top). Lower the temp to 450 and cook for one hour, lower the temp to 400 and cook for one hour, lower the temp to 350 and cook for one hour or until done (most turkeys are done in 3.5 hours). I know some fry turkeys but it isn't always practical and can make a big oily mess.. I like to broil/bake them. The broth and veggies help to keep the meat moist... and the shortened cooking time is so much better than the old fashioned way of cooking at 350 for like half a day...
Woohoo... its Thanksgiving, probably my favorite holiday!
